Traditional Dutch food to go in Utrecht

In 2008, we posted about Mailing food, an Amsterdam start-up that served stamppot and other food, and now Utrecht is following suit with a new chain of stamppot restaurants, with dreams of conquering New York City in the future. Stamppot to go opened ‘quietly’ on 17 December 2009, but should have a proper grand opening soon. Although stamppot is winter food, they will be open in the summer with summer variants.

For one, I’m thrilled someone is pushing food domestically that many of us here eat, counterbalancing the madness at pushing cheese on Asians in general who are quite lactose-intolerant or pushing the cheese slicer (‘kaasschaaf’) (a Norwegian invention) on Americans as the next best thing since sliced bread (pardon the pun). Although potaotes are South American in origin, smoked sausage is a Dutch invention and that’s what makes the stamppot a great dish.

Gay wine: bad taste or good marketing?

Slowly but surely Dutch consumers are grasping the idea of enjoying wine and matching it up with food, wine fans keep telling me. Despite the lack of proper tasting and buying wine by numbers instead of actually being interested in pesky details like regions and vines, Dutch business people have tons of creative ways to get people drinking wine without thinking too hard.

That said, the idea of a ‘Chardongay’, which isn’t even a Chardonnay but a mix of Chenin Blanc and Colombard, while the red version (getting confused now) is straight Cabernet Sauvignon, pun intended, just sounds, well, blah. Vinamis, the company who thought this up apparently couldn’t find an acceptable cheap Chardonnay (bless you). And since we’re driving through cliché-ville, what about a rosé? It’s coming out later, as well as the bubbly.

I think it’s a slightly funny idea that is akin to drinking Arrogant Frog wine (see photo). It leaves lesbians out in the cold because hey, they don’t drink anyways (cliché) and the wine is going for the funny name. But, OK Arrogant Frog isn’t that bad and it’s cheap.

Grenades found with potatoes

Yesterday at the Farm Frites fries factory in Oudenhoorn, South Holland, three WWII grenades were harvested along with the potatoes. The cops were called in and the grenades were taken away. Oh no, wait. In Dutch fashion, they had a discussion about whether the grenades were dangerous or not.

One of the comments to this discovery is ‘patatje oorlog’, which literally means ‘war fries’ and is a junkfood dish of fries with all kinds of sauces that looks like war took place. Notice I don’t use the word ‘French’ with my fries simply because fries were never French, they were Flemish (Belgian) back in the day. And using ‘freedom’ to describe fries is for losers.

Not so merry Christmas yet

Every year around the holidays some of the same complaints rear their ugly heads and every year nothing is ever resolved except for the papers having something to polarize readers about. Although many people do celebrate Christmas in the Netherlands, the real gift-giving was last week, and as one person mentioned on Twitter, it’s time for lists of the best this and that and counting down until 2010.

Back by popular demand, animal activists whining about foie gras in restaurants. Ah yes, the decadent French and their foie gras. They mistreat animals and not serving it in the Netherlands is taking a stand. Why isn’t it banned then? Get on with it. And then list all the other bad things we do to animals and move on and leave Christmas alone!

Not being sure about putting up a Christmas tree in the lobby of a higher vocational school in The Hague because that’s not the best choice for a multicultural society. Excuse me? Nonsense. And it was nonsense, and misinterpretated and the Minister of Education, Ronald Plasterk apparently has time for this nonsense, too.

And in regional news, how about the city of Nijmegen digging a big hole to plant Christmas right in front of your store for Christmas as a recession gift? I can imagine that the big store is not amused with the city’s idea of decorating the square in front of it. The store found out in a letter sent on 3 December that was not even addressed properly.

Companies are apparently going to keep their Christmas parties cheap and I bet the traditional Christmas packages employees receive (I get people’s leftovers, I’m self-employed) won’t have anything special in them, never mind some employees having to drive to their office headquarters (!) to pick up the orange-flavoured powdered hot chocolate and the tuna with tomato and veggies in it.

Low fat mayonnaise with full fat taste

Thanks to a new production process, Koen van Dijke of the University of Wageningen has come up with a way of making mayonnaise using less oil, but with the same taste as full on fat mayonnaise. When you make mayonnaise, you need egg yolks or lemon as an emulsifier to stabilise the mixture. To do this right, you need to use a lot of oil, which makes mayonnaise fattening.

Van Dijke developed a microscale system that adds very little oil to a lot of water, producing a stable emulsion. Then this mix is added to more water, producing a new emulsion that is mostly water, but that retains the same taste.

Drinking wine by numbers

Picking a wine if you have no idea what you are doing can be a painful process, especially if you have only the bottle’s label to go by. To reduce ‘choice stress’, 94wines.com has taken every last bit of confusing information from the bottle and put a number in its place. If you liked the 51 last time, you know you should buy it again. If you didn’t, you know to leave that number alone the next time.

I am sure true wine connoisseurs will be outraged by the idea of objectifying wine, but hey, it’s the naughties, baby, at least for one more month.

A short online wine test should help to get you underway for the first purchase by determining the basic flavours you want. Young marketing buffs Lucas Tieleman and Sander de Jonge came up with the whole concept.

Whining about wine – you’re doing it wrong

I once wrote about going to a wine tasting event where famous Dutch winemaker Ilya Gort of the La Tulipe vineyard (Obviously not the bottle shown here) gave drinking tips. One of the things that really bothers him — and helps him sell books and his inexpensive wine — is that the Dutch don’t take the time to appreciate what they are drinking. He had said “someone worked very hard to get it [the wine] that way” and he’s right, although I can imagine the average Dutch consumer thinking that they can do whatever the hell they want with the wine they bought at the store and rightly so.

Gort claims in Dutch newspaper ad.nl that three quarters of the Dutch don’t taste wine properly as they just drink it instead of slurping it. No idea where that percentage comes from, but hey. Slurping is frowned upon in many Western cultures, but with wine, you can slurp to taste the wine, then you can drink it and know what you’re drinking. Gort is plugging a book about slurping, so let’s be honest, the ‘story’ sounds more like an advertorial.

I am in no way a huge wine connoisseur, but my non-book-pushing gripes involve the following:

– The very bad quality of wine glasses here. It’s a freaking juice glass! The nicer the glass, the more pleasant the drinking or we’d put cocktails in a big coffee mug and call it a day.

– When I ask for wine in a bar, choices are often limited to red or white, and dry or fruity.

– When I want to know what the house wine is, I get a shoulder shrug and get told it’s the house wine.

I also have to tell you about the time a Dutch girlfriend invited me over for dinner and said ‘bring a red Merlot’ (Merlot is always red), either as an excellent joke or worried I’d go Dutch on her. I laughed and got worried about her taste in wine.

All these comments make anyone sound like a snob — and I have had great wine in the Netherlands — but accepting this state of affairs makes one sound like a provincial hicks. No wait, they drink beer. Damn.

Chips, Halloween, pumpkins and oranges

I used to associate Old Dutch with a cleanser and now I discover that my Canadian childhood brand of chips (not crisps, eh) went from Humpty Dumpty to Old Dutch. Sure, the real Dutch people have chips (and don’t call them crisps, either), but Halloween chips is a North American invention this time. The bags are small and given to children dressed in costumes when they go trick or treating, which means going door to door asking for candy (and not sweets). We were the people that gave kids small boxes of raisins or pencils and erasers instead of junk food. When your big bag is full, you go home, throw out the stuff you won’t eat and sort your candies. My younger brother used to hide them and eat them all year round.

Right now, on every street corner and market, people are selling pumpkins to make jack-o’- lanterns, which are pumpkins gutted and carved to put candles in that give Halloween its look. We make pumpkin pie and dry the seeds and eat them. Pumpkins seeds are extremely healthy apparently.

Why am I explaining all of this? Because the Dutch do not celebrate Halloween, and although they do throw a few great parties for adults (and people, you really need to work on your costumes), it’s not the big deal it is in Canada and the United States. Dutch friends have told me that children of North American parents have a celebration for their kids, which is something they cannot skip. And in Canada once it’s over, all the Halloween stuff will disppear instantly in the stores and make way for Christmas stuff.

The market picture of these oranges in Montréal where I have been hiding for the last 10 days is totally unrelated and should be plural.

Hacker students score pizza for pennies

If students and pizza (and probably beer) is not the perfect combination, then imagine students and pizza for next to no money and the money to buy beer.

For months, hundreds of students from cities such as Groningen, Breukelen and Utrecht had been getting pizza from Dutch website Justeat.nl for EUR 0.01 or 0.05 after hacking into the payment system. Just before paying for the pizza through an online banking system, a page was added somewhere to be able to change the final price to a few cents. In other words, the payment system wasn’t installed properly and certainly not secure.

The manager of the website is going to try and get the students to pay for the pizzas after all, as he’s out EUR 30,000. I think he should kick the IT incompetents he hired to install the payment system on his site really hard and claim damages (we don’t run out and sue here). It’s not like he’s the first ever online restaurant using the highly praised and easy-to-use Ideal payment system. Going after the smart students is easier, but lame, and they have no money.

Vegetarian fan complains about free meat snack

A Feijenoord (Rotterdam football club) fan decided to complain to the director of NAC (Breda football club) for the free sausage rolls (‘worstenbroodjes’) that were handed out at the game last Sunday. The Breda fans were given the free meat snack to comfort them for their team getting kicked 2-0 by Feijenoord.

The Feijenoord fan thought they should have thought of vegetarians, maybe even offered a meat-free alternative. It reminded me of the airplane I took yesterday which offered cheese or pork sandwiches. It can be done.

I get what they guy is saying, but then you’d have to think of obese people, people who have low-sodium diets, gluten-free eaters, diabetics, people with peanut allergies, kosher, halal, and so on.

Surprise: we live in a mostly meat-eating society. Just say no and don’t eat it is also an option.
